Temaki sushi (aka hand roll sushi) is cone-shaped sushi, with a small sheet of dried seaweed rolled up to act as the cone.
It is formed entirely in the hands, without the aid of a sushi press, or bamboo mat, like other sushi.
A sheet of nori seaweed is placed in one hand, rice placed on top of the sheet, and filling placed on top of the rice.
Then, it is rolled up into a cone or cylinder shape.
Temaki sushi can be more expensive than other sushi, because it can hold more ingredients.
Temaki has been popularized in the west under the name of “hand rolls”.
