Curried Chickpeas Recipe
A great Indian side dish.
Ingredients
- 1 Onion large, chopped
- 1 ½ tablespoon Oil
- 2 cloves Garlic crushed
- ½ teaspoon Chili Powder
- 1 teaspoon Cumin ground
- ½ teaspoon Coriander ground
- ½ teaspoon Ginger ground
- 1 tin Canned Tomatoes chopped
- 1 tablespoon Tomato Paste
- 2 tins Chickpeas
- 1 ¾ cup Vegetable Stock
Instructions
- Heat oil in a large saucepan over medium heat, fry onion in the oil until soft. Add garlic and spices and cook for 5 minutes.
- Add remaining ingredients and bring to the boil, then cover and simmer for one hour.
Notes
Use tins approximately 14 oz / 400 g in size.
