Asiago is a northern Italian cheese made from cow’s milk. There are two versions, a traditional artisanal version used as you would Parmesan and a modern, industrial version used as you would use a cheddar.

Gouda cheese is a hard cheese made from whole cow’s milk. It is mild tasting and pale yellow with a hard rind. Typically it is coated in red wax, though variations may be coated in black, brown or yellow wax.
Muenster Cheese
Muenster is a washed-rind, semi-firm cheese with a red sticky rind. European versions are very smelly; American versions are milder and less aromatic.
Ricotta Cheese
Ricotta cheese is a soft fresh cheese. It is frequently used as an ingredient in dishes, for instance savoury pies, or when stuffing pasta.
