Asiago is a northern Italian cheese made from cow’s milk. There are two versions, a traditional artisanal version used as you would Parmesan and a modern, industrial version used as you would use a cheddar.
Sweet Curd Cheeses
Brick is a sweet, nutty-tasting American cheese with a soft, semi-firm texture. The colour will range from white to pale-yellow. It’s an all-purpose cheese, great on sandwiches or cheese trays, but it also melts well in cooked dishes.
Edam Cheese is a semi-hard, pale yellow Dutch cheese with a mildly-tangy and slightly salty taste. There are two types: generic which can be made anywhere, and a protected-name type which can only be made in the Netherlands.
Gouda cheese is a hard cheese made from whole cow’s milk. It is mild tasting and pale yellow with a hard rind. Typically it is coated in red wax, though variations may be coated in black, brown or yellow wax.
Muenster is a washed-rind, semi-firm cheese with a red sticky rind. European versions are very smelly; American versions are milder and less aromatic.
Ricotta cheese is a soft fresh cheese. It is frequently used as an ingredient in dishes, for instance savoury pies, or when stuffing pasta.
Sweet curd cheeses is a generic term for cheeses that have no starter bacteria added, just rennet.
Sweet curd cottage cheese is similar to regular cottage cheese, but has larger curds and less tang. It can be used as an ingredient in cooking, but is often used as is on salad plates, etc.
