Fennel, Watercress & Walnut Salad

If you're jaded and think you are bored of fresh salads, try this. It's got every flavour and texture happening. Very good with a glass of wine and good crusty French bread.

Ingredients
  

  • 3 oz Watercress
  • 3 oz Green Olives
  • 2 oz Walnuts halved
  • 1 Fennel medium
  • 1 tablespoon Dijon Mustard
  • 6 tablespoons Walnut Oil
  • 2 tablespoons Red Wine Vinegar
  • Salt
  • Pepper; Pepper

Instructions
 

  • Prepare the dressing first. Mix the mustard and oil together, then whisk in the oil and seasonings. Set aside.
  • Drain olives, leave whole, put in bowl along with the walnut halves and washed watercress.
  • Wash, trim and halve the fennel, and cut into ¼ inch (5mm) thick slices. Put the slices in the bowl with the watercress. Pour the dressing over the salad ingredients, toss well and serve.
