Blender Mayonnaise Recipe

Blender Mayonnaise Recipe

Ingredients
  

  • 2 tablespoons White Wine Vinegar
  • 2 tablespoons Lemon Juice fresh
  • 1 Egg
  • 1 Egg Yolk
  • ½ teaspoon Salt
  • 1 teaspoon Mustard dry
  • 1 teaspoon Sugar
  • 2 cups Corn Oil

Instructions
 

  • You can make this in a food blender or processor.
  • Add all the ingredients to the blender except the oil.
  • Pulse 4 or 5 times, then turn processor on medium to high and drizzle the oil in very slowly. As you proceed with a steady stream of oil, you will notice that at about 1 cup (8 oz / 250 ml) the sound changes as it thickens. Keep drizzling until the oil is all in.
  • At this stage, open and taste. You may want to sweeten it with a teaspoon or sugar or honey.

Notes

The less distinct taste the oil has, the better your mayonnaise will taste: in other words, don't use very good olive oil.
Instead of lemon juice, you can use white wine vinegar.
Store in fridge; use within 2 weeks.
