Brie de Chèvre

Brie de chèvre

Brie de chèvre. Thesupermat / wikimedia / 2015 / CC BY-SA 4.0

Brie de chèvre is a cheese that looks something like Brie, except it is made from raw goat’s milk curdled with vegetarian rennet.

The cheeses are round, about 1.5 to 2 cm (¾ inch) tall, and weigh approximately 500 g (17 oz.) The crust is white with mould, and like Brie, it gets creamier inside as it ages.

Brie de chèvre cheese is aged for just 10 to 12 days: it matures quickly because it is so thin.

The apparent resemblance to Brie, however, vanishes with the first bite: it has a very goaty taste.

Nutrition

Brie de chèvre contains 45% butterfat.
