Red Dragon (aka Y-Fenni) is a Welsh white cheddar cheese made from pasteurized cow’s milk.

It has a creamy, buttery cheddar taste, combined with a tang from the brown ale and a bit of piquancy from the whole mustard seed mixed into it.

When sold coated in pale yellow wax, it is called Y-Fenni Cheese. When sold coated in red wax, it is called Red Dragon Cheese.

Production

The milk is curdled with vegetarian rennet, pressed into moulds, then unmoulded and aged 3 months.

There are two sizes of the cheese made; the larger one is 10 cm tall x 30 cm wide (4 inches x 12 inches), and weighs 3 kg (6 ½ pounds).

Cooking Tips

Red Dragon / Y-Fenni Cheese melts well.

Language Notes

Y-Fenni is the name of the town it is made in: Y-Fenni (aka Abergavenny) in south Wales.
