Red Dragon or Y-Fenni is a Welsh white cheddar cheese made from pasteurized cow’s milk.
It has a creamy, buttery cheddar taste, combined with a tang from the brown ale and a bit of piquancy from the whole mustard seed mixed into it.
The milk is curdled with vegetarian rennet, pressed into moulds, then unmoulded and aged 3 months.
There are two sizes of the cheese made; the larger one is 12 inches (30 cm) wide, 4 inches (10 cm) tall, and weighs 6 1/2 pounds (3 kg.)
When sold coated in pale yellow wax, it is called Y-Fenni Cheese. When sold coated in red wax, it is called Red Dragon Cheese.
