Rice is a staple in many of the world’s cuisines, appearing at every meal of the day. More than half the people in the world eat rice on a daily basis.
It’s no surprise, then, that there are many traditional rice dishes, both in Eastern and Western cuisines. The rice recipes in this section have largely been selected to illustrate or support entries in the encyclopaedia, though some offer a modern twist on them.
