Pasta for Baking

Amori

Amori are curled, ridged hollow tubes of pasta that look like corkscrew macaroni. They are used in pasta dishes that will be baked, or that have creamy sauces. Cooking Tips Allow 3 to 4 oz (75 to 100g) of dried Amori per person. Boil in salted water for 10 to 12 minutes.

Cannelloni

Cannelloni © Denzil Green Cannelloni are large, hollow tubes made of pasta. They are usually boiled first to cook them, then stuffed and baked in a sauce. You can also now buy ones which don’t require the boiling first. Language Notes In Italian, “cannelloni” means “big reeds.”

A far larger version of Conchiglie for stuffing and baking. Cooking Tips Boil first for 11 to 14 minutes, then let cool for easier handling, then stuff, then bake. Substitutes Manicotti
