Savoury Fritter and Patty Recipes

Fritters and patties are some of the oldest concoctions that people have cooked, because they just require a heated cooking surface. They don’t need an oven, they don’t need to be rolled out, and while they can sometimes be made of meat or fish, just as often they are made of inexpensive carbohydrate sources such as potatoes, or legumes.

What makes them all delicious, however humble the main ingredients, is the action of frying them in cooking fat over high heat, causing a Maillard reaction leading to crispy, caramelized surfaces.
